Barrel-Aging in the Caves.

Unique to Anderson's wine making art is the extended time of barrel-aging in one of two underground caves. On average the Cabernet Sauvignon and Èloge wines spend up to two years in barrels prior to bottling.
     The two caves on the property total just over 11,000 square feet and are capable of storing more than 500 barrels, the equivalent of 15,000 cases of wine.
     Throughout the year, young barrel-wine is tested and re-barreled regularly to remove sediment and to guide the development of color, taste, and smell.
